Quesadilla Wrap

Ingredients: 2 Mission Mediterranean Herb Deli Wraps, 1 thinly sliced large onion, 1 tbsp olive oil, 55g (2oz) grated cheddar cheese, 55g (2oz) wafer thin ham, 55g (2oz) sliced cooked chicken, 1 tbsp chopped coriander

Instructions:

  1. Fry the onion in oil until soft and golden
  2. Divide the ingredients between two wraps
  3. Sprinkle a generous amount of cheese onto one half of a wrap
  4. Place the ham, chicken, onions and more cheese on top. Add a little coriander and fold the wrap over to make a half moon shape
  5. Heat a griddle pan, or frying pan, brushed with oil
  6. Cook the wrap on a medium heat for 1-2 mins on each side until golden and crisp
  7. Cut in half, cool, and then wrap in cling film to chill until ready to go

Chocolate Biscuit Dried Cherry & Marshmallow Wrap

Ingredients: 200g bitter chocolate, 100g milk chocolate, 8 digestive biscuits, 60g semi dried cherries, 50g sunflower seeds, 60g semi dried cranberries, 50g baby marshmallows, 2 tbsp golden syrup, 2 tbsp extra virgin olive oil

Instructions:

  1. Melt the chocolate over a pan of simmering water
  2. When melted add the golden syrup and olice oil
  3. Mix well, then pour over the rest of the ingredients - carefully mix together
  4. Lay a wrap on a chopping board and fill with a quarter of the mixture
  5. Fold up in the normal way, then wrap in cling film nice and tightly
  6. Chill for 2 hours, then slice in diagonal 1cm thick slices
